Preserving Tradition: The Palette of Lanna Authenticity at North Restaurant

In the bustling heart of Bangkok, North, situated on Sukhumvit 33 emerges as a culinary haven dedicated to bringing the true flavors of Northern Thai cuisine to the forefront. The commitment at North lies in presenting the rich culinary heritage of Lanna through a diverse range of flavors, drawing inspiration from Lanna culinary wisdom. The menu showcases the breadth and depth of traditional Northern Thai recipes that have stood the test of time.

The visionary behind this venture is Pom Piyapat Attavipach, a North native driven by a deep love for the region's culinary treasures. Fueled by a desire to fill the gap in the Bangkok food scene, where no restaurant quite captured the essence of Northern cuisine as he remembered it, Pom embarked on a journey to showcase authentic flavors.

North's concept revolves around presenting the original North cuisine in a modern style, elevating the culinary experience to new heights. Pom, along with his mother, scoured Sukhumvit until they stumbled upon a century-old house that resonated with the nostalgia of his great-grandfather's home in Lampang. The decision to establish North here was sealed, with the house retaining its original charm. The green color scheme, a tribute to the popular color in the North, serves as a nod to the natural beauty of the region, making it unmistakably 'North.'

The kitchen at North is fueled by a new generation of culinary enthusiasts, spearheaded by Chef Panupong "Nu" Songsang, a proud native of Chiang Rai and the head chef. The meticulous process of crafting the menu involves in-depth research into seasonal ingredients, ensuring that only the best flavors are incorporated. Chef Nu explains the team's approach: understanding the popularity of dishes during specific seasons and infusing innovative twists while preserving the authentic taste of the North. The goal is for patrons to savor the real essence of 'Lanna.'

Beyond preserving well-known Lanna dishes, North is dedicated to reviving local traditional recipes that may have been lost over time. These hidden gems are not only resurrected but are also presented in an elaborate fine dining style, marrying the past with the present for a truly unique culinary experience. As North strives for culinary excellence, there is an equal commitment to supporting the rural communities of Northern Thailand. The careful selection of ingredients includes a focus on empowering local farmers and producers, fostering a sustainable ecosystem that benefits both patrons and the communities sourced from.

The team is dedicated to introducing Northern Thai recipes, offering patrons a genuine taste of the region. The commitment to sharing Northern Thai culture extends to the 'Khan-Toke' tradition, a regular feature in North's culinary journey. While 'Khan-Toke' remains a constant, the dishes atop it change with the seasons, adapting to different variations. The goal is for everyone to craft their unique dining  experience.
